Guided by a vision of nature and tradition
Tom Čopar, the rising talent at the helm of the Plesnik kitchen, and Janez Bratovž, a pioneer of contemporary Slovenian gastronomy, form a creative partnership grounded in respect for nature and the local community. Drawing on Čopar’s experience in acclaimed restaurants and Bratovž’s decades of influence on Slovenia’s culinary scene, they have crafted a clear and distinctive culinary philosophy.
Their approach blends tradition with modern technique, celebrating the valley’s ingredients while presenting a thoughtful, forward looking interpretation of Slovenian cuisine.
