Through close collaboration with local producers and a commitment to sustainability, Čopar curates a menu that is deeply rooted in its environment. Plesnik’s in-house sommelier, Simon Voler, has carefully curated a wine list that celebrates the very best of Slovenia's wine-growing regions. Complementing these are a refined selection of French, Italian and Spanish labels, offering a well-rounded international touch. The beverage menu also features a thoughtfully chosen collection of spirits, ranging from globally renowned names to unique local gems. Highlights include aged gin, apple brandy and house-made blueberry and sage liqueurs. Of particular note is Burje Gin, crafted by Primož Plesnik at the nearby Eko Hiša na Razpotje.
