The tasting menu, co-created by chefs Tom Čopar and Janez Bratovž, takes guests on a refined culinary journey through the flavours of the Upper Savinja Valley. Each course is thoughtfully designed as a tribute to the place, the season and the people who shape this landscape. Guests may choose between a four- or seven-course menu, with dishes unfolding into a harmonious composition of flavours, textures and stories.

A Journey Through the Flavours of Nature
The tasting menu is composed of carefully selected courses, complemented by greetings from the kitchen. Each dish reflects a specific micro-location: the nearby forest, an untouched meadow, the hotel garden and local farms. When sirnek cheese with wild herbs, venison fillet or buckwheat with mushrooms appears on the plate, guests taste nature in its purest form.
Seasonality as the Only Constant
At Plesnik, each dish is shaped by what nature offers at its peak. Techniques such as fermentation, smoking and drying, alongside a thoughtfully curated pantry, keep the kitchen intimately connected to its surroundings. Nothing is added without purpose, nothing placed merely for effect. The flavours are allowed to speak in their own clear, confident voice.
An Intimate Setting for Great Gastronomic Moments
Plesnik Restaurant is located within the Hunting Room and welcomes only 18 guests. The intimacy of the space allows for an authentic connection between the chef, the service team and the guest. In line with sustainability principles and the zero-waste philosophy, reservations are required at least one day in advance.

Sommelier Simon Voler curates wine pairings based on carefully selected Slovenian wines – from Primorska, Podravje and Posavje to small boutique wineries renowned for their authentic expression of terroir. The wine list is further enriched by a thoughtful selection of French, Italian and Spanish wines. For guests who do not consume alcohol, a series of refined non-alcoholic cocktails is offered, prepared with local herbs and the natural flavours of the valley.
