Experience shaped as by landscape and skill
Set within one of Slovenia’s most pristine valleys, Plesnik Restaurant draws from the quiet strength of its surroundings, blending inherited rural wisdom with a refined, modern culinary language. The result is an experience shaped as much by landscape as by skill.
Guided by a philosophy grounded in seasonality, working with local farms and deep respect for nature, the Plesnik Restaurant has earned the Michelin Green Star, inclusion in the Falstaff guide and widespread acclaim from Slovenian culinary media. Each recognition reflects a sincere culinary story aligned with the natural cycles of the Upper Savinja Valley.
Michelin Green Star
The Green Michelin Star represents Michelin’s commitment to recognising responsible gastronomy – kitchens that look beyond the plate. At Plesnik, sustainability is not a concept but a daily practice. Ingredients are selected with care, prioritising proximity, season and traceability. Each dish reflects a conscious relationship with land, producers and time.
When Falstaff Takes Notice
Falstaff highlights Plesnik not only as a boutique retreat immersed in nature, but as a culinary destination of international relevance. The guide recognises the chefs’ precision, the exceptional quality of ingredients and the quiet harmony of dishes that mirror the Alpine environment.
Plesnik in the VIVI Selection
Alongside international guides, domestic experts have also acknowledged Plesnik’s distinctive experience. The acclaimed VIVI selection confirms Restaurant Plesnik’s place among Slovenia’s most respected dining destinations. What they like the best is the holistic nature of the experience – from its tranquil Alpine setting to its thoughtful cuisine and sincere hospitality. The visit is described as harmonious, intimate and memorable.
A Culinary Philosophy Grounded in the Rhythm of the Seasons
Nature leads the kitchen at Hotel Plesnik. Each season reshapes the menu according to what the valley offers at its peak. Autumn is earthy and aromatic, winter is thoughtful and preserved, spring is fresh and green and summer is generous and vibrant. This philosophy invites guests to experience flavour as a reflection of time and place – here and now.
Two Culinary Voices, One Vision: Janez Bratovž and Tom Čopar
Behind the culinary story of Plesnik stand chef Janez Bratovž, a pioneer of modern Slovenian cuisine, and young chef Tom Čopar, whose approach is defined by precision, restraint and a strong connection to nature. Together, they create dishes that bridge the past and the future of Slovenian gastronomy – natural, sustainable, sensory and deeply rooted in place.
A Thoughtfully Curated Culinary Journey, From Morning to Evening
Working with local suppliers is not merely a logistical choice, but the foundation of Plesnik’s culinary philosophy. Every dish carries the story of the place and the people who shape it. Beef for soups and meat for sausages and salamis come from Domačija Plesnik in the Logar Valley; goat cheeses, curd and fresh cheese from Kmetija Matk; cured meats from Kmetija Perk; cheese and butter from Kmetija Ploder in Solčava. Eggs are supplied by Kmetija Moličnik from Luče, while dairy products – yoghurt, curd, cheese and buttermilk – come from Kmetija Spodnji Strmčnik. Fruit, vegetables and freeze-dried ingredients are sourced from the organic producer Liogarden in Luče and from Kmetija Grad in Domžale. Flour is milled by Brinec Farm Mill in Rečica ob Savinji, pumpkin and sunflower oil as well as vegetables are supplied by Kmetija Veršič from Markovci, honey comes from Borak in Ljubljana, and trout from the Špegelj fish farm in Male Braslovče and Goričar fish farm in Podbočje. Respect for their work is reflected in every dish – in the purity of flavours, traceability of origin and a genuine connection to the valley.
For an additional charge, guests may choose a four-course dinner, creating a gourmet full-board experience that also includes a complimentary light lunch with a daily soup and salad bar. Those seeking a more refined experience can opt for a four- or seven-course fine-dining tasting menu, served by prior reservation in the Plesnik Restaurant.
