Michelin Guide included Hotel Plesnik among the best
The internationally acclaimed Michelin Guide has included the restaurant of Hotel Plesnik among the best in Slovenia for 2025. In addition to being awarded the Michelin Selected distinction, the restaurant also received the prestigious Green Michelin Star, the highest culinary recognition for sustainable practices and environmentally responsible gastronomy.
The Plesnik Restaurant, operating within Hotel Plesnik, has confirmed with this accolade that its culinary philosophy is not only top-tier but also environmentally conscious, people-focused, and rooted in tradition.
Over the past year, Hotel Plesnik, in partnership with chefs Janez Bratovž and Tom Čopar, successfully developed a new culinary vision, bringing high-end cuisine to the heart of the Logar Valley. In October, the hotel revamped its à la carte menu, and this March, they introduced the fine dining Plesnik Restaurant, which offers seasonal and hyper-local tasting menus. The dishes pay tribute to the Upper Savinja Valley, drawing inspiration from its forests, meadows, and traditions.
“The Green Michelin Star is a tremendous honour and a recognition that our approach – from sourcing local ingredients to working with nearby farms – does not go unnoticed,” said head chef Tom Čopar.
“In our restaurant, there are no four seasons; there are months, even specific weeks, when an ingredient is at its peak. I’m proud that our effort and excellence have been recognized by Michelin,” added chef Janez Bratovž.
“True sustainability stems from respect – for nature, heritage, and people,” said Urška Kolar, Director of Hotel Plesnik. “Over the past year, we’ve taken important steps forward. With the launch of our new culinary journey alongside chefs Tom Čopar and Janez Bratovž, we have deepened our focus on local sourcing, cultural heritage preservation, and honoring local traditions. We’re bringing refreshed old recipes back to the plate from grandmother Marija Plesnik’s cookbook – such as steak tartare. Traditional local dishes like grušavi žlinkrofi and beračeva torba (mentioned in Dr. Janez Bogataj’s book) have been given a new twist. At the same time, we remain committed to preserving the pristine nature that surrounds us. We’ve held Green Globe and Slovenia Green certifications for years, and the Green Michelin Star is a new milestone in our pursuit of a more beautiful and sustainable Logar Valley.”
Nestled in one of Slovenia’s most breathtaking alpine valleys, the Hotel Plesnik Restaurant is a shining example of how top-level gastronomy can grow from close cooperation with local producers, seasonal ingredients, and deep respect for the natural environment.
