1 March: Culinary Workshop: Grandma Plesnik’s Legendary Steak Tartare
Culinary March begins with a tribute to heritage. Under the guidance of renowned chef Janez Bratovž, guests will prepare Hotel Plesnik’s iconic steak tartare – a dish that has delighted gourmets for more than a century. The recipe was first recorded in 1935 in the handwritten notebook of Marija Plesnik. Its secret has been carefully preserved and will be revealed exclusively to workshop participants – a rare opportunity to step into living culinary history.

6 March: Signature Drinks Tasting: The Art of Plesnik Cocktails
The second weekend opens with a refined exploration of Plesnik’s signature beverages, with a special focus on gin. Following a guided tasting, in-house sommelier Simon Voler and mixologist Jonas Krebs will reveal how local herbs, fruits and alpine botanicals are transformed into distinctive house cocktails.

7 March: Spring Fine Dining Premiere with Local Producers
On Saturday, 7 March, the new spring fine dining menu of Restaurant Plesnik will be unveiled. Created by chefs Tom Čopar and Janez Bratovž, the menu reflects a close dialogue between kitchen and countryside.
Local suppliers – whose ingredients shape the identity of each dish – will join the evening, presenting select appetisers alongside the chefs. The experience continues with a relaxed gathering, accompanied by music and conversation.

14 March: Dinner of Three Chefs
One of the month’s highlights unfolds on Saturday, 14 March. Chefs Tom Čopar and Janez Bratovž will host Sabina and Grega Repovž from Gostilna Repovž, whose cuisine masterfully weaves sustainability, tradition and modern expression into refined contemporary farm gastronomy.
The evening’s menu will be paired with wines from Benedetič Winery, completing a dialogue between terroir and technique.

15 March: Culinary Workshop: Flavours of the Solčava Region
In a hands-on Sunday workshop, chef Janez Bratovž pays homage to the culinary heritage of the Solčava region. Participants will explore traditional dishes such as sirnek, masovnk, buckwheat obrnjenek, grušavi žlinkrofi, beračeva torba and Plesnik gibanica. For those unfamiliar with these evocative names, the workshop promises discovery – and the confidence to recreate these regional classics at home. The experience concludes with a locally inspired lunch.

21 March: Shepherds’ Hike and Alpine Culinary Experience
On the first day of spring, guests are invited on an exciting hike with local shepherds – a new signature experience at Hotel Plesnik. This guided walk (up to 2 hours) weaves together nature, stories passed down through generations and gastronomy.

We will bring Culinary March to a close by taking part in Restaurant Week – a nationwide celebration that opens the doors of fine dining to a broader audience. For this occasion, chefs Tom Čopar and Janez Bratovž will design thoughtfully composed multi-course tasting menus offered at a more accessible price.
